pb&j

supposedly e made a dessert similar to this recipe... PB&J cupcakes... this past weekend for her brother's wedding. this is probably not THE recipe she used, but it's one of a few i found while searching online and it looked easy. other recipes used peanut butter frosting, which sounds super good too. so, anyway, i thought i'd post the recipe in a gesture of congrats to the now married couple.

good to make even if you're not getting married:

ingredients:
1 cup creamy peanut butter
1 1/2 cups warm milk (or water)
1 box yellow cake mix
3 eggs
2 tablespoon vegetable oil
1/2 cup strawberry jam

instructions:
Preheat oven to 350 degrees. Line 24 muffin cups with paper liners. In a large bowl, combine the peanut butter and warm milk/water with an electric mixer until well-blended. Add the cake mix, eggs, and vegetable oil. Beat 2 minutes, until smooth. Spoon the batter into the lined cups. Drop a teaspoon of jam on top and in the middle of the batter in each cup. Press down on the jam slightly with the back of the teaspoon. Bake 20-25 minutes, until the centers are firm. (Do not under bake.) Cool in pan for at least 5 minutes before removing.

and here's the recipe for PB frosting from a different site:

ingredients:
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup smooth peanut butter
1 (8-ounce) package cream cheese, at room temperature
4 cups confectioners' sugar
1 tablespoon milk

instructions:
Beat the butter, peanut butter, and cream cheese with a hand or standing mixer on medium speed, until light and fluffy. Slowly add the confectioner's sugar and continue to mix until the frosting is smooth. Mix in the milk and continue to mix until it reaches a good spreading consisting.

Yield: 2 cups
